2017-10-
2016-11-26:
- malt: 2-row base, 15% munich, 15% rye, 3% special B, 3% c120, 4% brown sugar
- hops: 16g CTZ 60m FWH; 140g CTZ/Chinook 5m; 200g Chinook/Simcoe dry hop (way too much CoH from CTZ and Chinook)
- bumped up OG target to 75
- expected efficiency: 78%, actual: 70 (ended up at 1.070 with 23L)
- mash: heated to 72, mashed at 67.7
- using yeast from House Bitter, S-04
- violent fermentation for first 24hrs
- 2016-11-30: tasted - thick and meaty. no weird flavors but it needs some more time. Getting there. Bitterness balance seems good.
- 2016-12-6: sampled pre-dry hop. pretty balanced but a little hot.
- 2016-12-6: dry hop: 192g (8 g/L) chinook, simcoe; added 100g each
- 2016-12-10: fined with 1/2 tsp gelatin and kegged
- FG: 10, ABV: 7.9% - we'll round to 8
- tasting notes at kegging: still really aggressive bitterness - must be the chinook; lots of good flavors, could be good... maybe next time leave out the 60m addition
- after chilling for 24hrs: burst carb @ 30psi for 24hrs, then back down to 12
- 2016-12-11: still hazy and not very red, but will get darker when the haze clears. taste is improving, actually tastes like something from Odd 13...
- 2016-12-14: carb'd (~48hrs at 30psi). hazy but clearing and getting redder. pretty bitter. maybe drop the 60m addition, go back to cascade/simcoe - or centennial/simcoe
- 2016-12-16: seemed to be the favorite at the dojo party. it's clearing, more red, and the bitterness has smoothed out
2015-12-4:
- malt: 2row base, 12% rye, 10% munich, 3% c120, 3% special B, 5% brown sugar
- short 168g rye. added 100g flaked barley.
- expected efficiency: 74%, actual 73
- mash: heated to 76; mashed at 71
- OG 72
- 120g hops at flameout, covered for 10 minutes before cooling. temp: 92-4
- 9g/l dry hop, CTZ/simcoe/chinook
- took a taste at day 12 and it's super dry and pretty bitter. hoping it will smooth out once it sits for a day or so
- carb'd and chilled, cold crashed. Taste is OK! Still pretty dry but I think it will improve over the next week.
- VERY dry and the rye is kickin'. 15% is too much. Go back to 10 or throw it out. This might be good after a few weeks but now it's too strong.
- 12-23: tried when I got home and hated it. tried a couple of hours later and it was ok (??). Still really bitter, but ok. Approaching the 1 week mark (12-25) so maybe this will be (really) ok by new years.
- one thing is certain: the aroma coming off this shit is fucking NICE!
[2014-9-21]
- used rye malt; mb didn't have any flaked rye
- dialed the c120 and sb down to 2% each. beer came out lighter, not as red. Might go back to 3%.
- heated water to 74; next time go for 72
- mashed at 68-9 (too hot), going for OG of 72 in hopes of an ABV of 7.5-8%
- OG too low at 67; next time plan on 75% efficiency
- turned up OG for next time (1.072), will try and hit 8% on the nose
- ABV came out to 7.5% which is fine (same as kingpin)This Recipe Has Not Been Rated
