Notes
This was a take on a strong Blonde ale with the wheat content significantly increased in an effort to raise the OG.
No exceptional occurrences during the brew process. Very efficient temperature step mash using the recirculating pump and the burner. Mash-out was slightly delayed because the other batch not being through the counter-flow chiller which may have contributed to some more complex sugar strings (and therefore higher than expected final gravity). Next time Mash-out by using recirculator to raise to 170 and stop 158dF enzyme activity.
Primary fermentation for 14 days. Cold crashed in primary. 3 days later racked to keg and force carbonated off-line with 30psi at 34dF.This Recipe Has Not Been Rated
