Notes

Efficiency set at 76% mash temp 151F. Mash out to 165F Adjust to achieve mash ph of 5.4 Pitch yeast at 52F for 5 days before slowly raising temp to clean up diacetyl. Rack to secondary on day 18 and allow at least 10 days at 35F before packaging. 30 ppm calcium and 50 ppm chloride desired
