Notes
Efficiency set at 76% mash temp 151F. Mash out to 165F
Adjust to achieve mash ph of 5.4
Pitch yeast at 52F for 5 days before slowly raising temp to clean up diacetyl. Rack to secondary on day 18 and allow at least 10 days at 35F before packaging.
