starter xxL une nuit au frigo pour decantation. 1L garder pour pitch pitch @25°C temp exterieure assez chaude. refroidissement difficile. volume final 22L + 1L de levures DF 1074 @ 25°C purge levure avant CC mise en bouteille le 24/10 =>21L belle couleur sombre à l'embouteillage 21L - 10.4brix - 1023 à 6°C soit 1021 @20°C note de bananes-anis à l'embouteillage ! DF 1021@18°C 10.4 brix resucrage 126g pour 21L soit 6g/L
