Notes

- March 26. Going with 8 gals with a pH of 5.4 and mash at 158. The steeped hops will be at 160 degrees for 5 mins. 7 gals preboil at 1.048. OG 1.064. Has an amazing citrus smell while cooling down. Added first dry hops the next day. Added second hops with 5 days left on 21 days. FG 1.009. 1/2 cup table sugar. Had a gal of trube and only 4 gal in the keg. Has some orange but also Amber color. - May 16, 8.5 gals with pH of 5.1. Added 1 lb of wheat for 3 lbs and drop 2 lbs of 2 row for 8 lbs. mash temp started at 178F. 7 gals preboil at 1.042. 5.5 gals at 1.054. FG 1.009. Batch is pretty good but try upping carapils to 1lb for more sweetness and mouth feel. Color looks perfect first 2 draws are cloudy. Still cloudy! - July 8, using 1lb of carapils and same amounts as May 16th batch. Plus drop citra to 0.5 boil and add 0.5 to steep. 6.5 preboil 1.035. Steep for 20 mins. OG 1.048. FG 1.006. Looks like dirty dish water but taste good and still cloudy. - Aug 16, going back to May 16th with 0.5 carapils and up to 9 lbs of 2 row with July hops schedule. Started with 9 gals. 7 gal preboil 1.044. OG 1.061. FG 1.006 - Dec 27, 8 lbs 2 row, 3 lbs wheat, 2 lbs flaked oats, 1 lb honey malt, drop cara pils. Start with 9 gals. 7.5 gals preboil 1.055. OG 1.063. - Mar 24, use above grain bill, drop citra at boil, drop citra down to 2 oz at steep. - June 23, drop 2 row to 7 lbs, use March 24 hops schedule, double batch day. Preboil 14+ gal 1.045, OG 1.54, London Ale III, locking this down - Oct 12, heated only 9 gal mash water, rinsed grains to get 16 gals, preboil 1.050, need rice hulls, WLP007 dry English ale yeast, OG 1.062 - Jan 12, mashed at 150+ for less fermentables, 8 gals preboil 1.040, should have stayed with 7 gals, maybe add 1lb 2 row to get 8 gals, - Apr 6, Cinco De Miko Brew, 8 lbs 2 row, mash 150F, rest the same, 8 gals preboil 1.040. OG 1.049. - May 11, added a 1/4 tsp salt, 8 gals pre boil - Sept 21, no change - Dec 30, simcoe 1 to 2 oz, mosaic 2 to 1 oz for steep, mosaic 1 to 0.5 oz for ferment, mosaic 1 to 0.5 oz for dry. Forgot the oats during mash, so mashed 158 for 5 mins on stove. - Mar 28, no sparge (0.1 gal/lb mash add), 9.5 gal of mash water strike 170F got 155F, preboil got 7 gal 1.045, rinse with 1 gal, 8 gal 1.040, temp 145F. - WLP008 east coast ale
