Notes

For 80 IBUs bittering, 9 hopshots are likely necessary. For yeast, a 4 day schedule on stir plates is necessary. Day 1: 1 vial into 1300 mL of wort on a stir plate. Day 2: Estimated cell count- 350 Billion cells. Chill and decant. Add starter wort to 1500 mL volume and stir/shake until yeast is suspended. Split into 3 flasks at 500 mL a piece. Top off with starter wort until 1300 mL each, propogate each on a stir plate. Day 3: Estimated cell count- 400 Billion cells each. Chill and decant. Add 750 mL starter wort and return to stir plates. Day 4: Estimated cell count- 750 Billion cells each. Ferment in 3x 5 or 6 gallon fermentors, transfer to 3x 3 gallon better bottles. If there's excess, transfer to some 1 gallon jugs and play with dry hops in the 1 gallon. Dry hop schedule is two additions, 3 days each. Per fermentor, it is .33 ounces Galaxy, Nelson Sauvin, and Ahtanum for each addition.
