08-03-2021 BREW DAY BATCH #227 Rebrew of Batch #226, CHanged Hops Per Brunwater: Mash 4.05 Gypsum, 2.23 CaCl, 1.96 mL Lactic. Sparge 2.65 Gypsum, 1.46 CaCl, 2.55 mL Lactic. Yields 100 ppm Sulfate, 80 ppm Chloride, pH of 5.66. Actual Mash pH was 5.40, Preboil pH 5.41 08-18-2021 REMOVED INVENTORY 08-04-2021 6:00 AM Fermentation sytarting SG 1.055, 2:45 PM SG 1.054, 8:00 PM SG 1.050 08-05-2021 6:15 AM SG 1.037 08-06-2021 5:30 AM SG 1.028 08-09-2021 5:30 PM SG 1.018 08-11-2021 6:15 AM SG 1.017 08-12-2021 6:15 AM SG 1.017 08-17-2021 1:30 PM SG 1.016 08-20-2021 11:30 AM 1.015 to 1.016 Added Dry hops in a bag under 3# CO2 08-24-2021 3:30 PM Kegged, Tilt 1.015, both Hydro's 1.010 call it 1.010 OG 1.059 FG 1.010 6.5% ABV 82.3% AA. Tastes very good, like a normal IPA, No off flavors detected. Orange, Marmelade, some firm bitterness but not overpowering. A little bit of tannin on the back of the tongue. Unable to check pH as pH meter needs new probe. Checked with strips it is below 5.0. Color is pretty yellow-gold, no green. Not much left in fermentor maybe .50 gallons so callit 5.00 to keg. There was not much head space in the keg but it did not come out Gas QD. Into keg #3 and put on 12# CO2 at room temp. 09-05-2021 Moved to fermentation freezer at 40 degrres still under 12# CO2.
