Notes

Modifications of several online recipes for Founders Mosaic Promise SMaSH beer - as requested by Mike Lelivelt — * RO water treated with Campden tablet * lactic acid: 2 mL to mash, 0 uL to sparge * Mineral additions: 6.7g gypsum, 0.6g CaCl2, 4.3g Epsom salts, 1.4g NaCl * overall finished water profile (all in ppm): Ca 65, Mg 16, Na 20, SO 200, Cl 44 * will pitch yeast starter with ~3 mo. old remnant from May brew; kept @4C in mason jar w/kombucha burp lid. 16-18hr growth target prior to pitch * immersion chilled to 85F and transferred to fermenter, chilling overnight to 65F * after 18 hrs oxygenated wort and pitched entire volume starter culture * visible activity <12 hrs. Seemed a little slower than I usual find after using a starter. PIcked up well by day 2. * bubbling has slowed to 1 per 5 sec or so. added dry hops on day 5 (ferm day 4). krausen still visible. set temp to 68F and will allow to free rise. * day 10: bubbling less than 1 / 30 sec. SG = 1.013. raised temp to 70F * day 12: SG = 1.008. bubbles occasionally seen, <1 / min. * day 15: have caught a bubble a few times but suspect it is done. Will give it another two days to be sure and then keg half and bottle condition the remainder. * day 17: FG = 1.008. Kegged half and bottled the remainder
