Taste Notes

3/4/14 - Tasting Notes A - Clear amber/gold. Some chill haze. Small tight head that leaves nice lacing. S - Tropical fruit, citrus, honey, subdued malt character, but it's there. T - Simcoe. Boom. Floral then going to citrus, spicy. Citrus (grapefruit peel) and spice linger. Some honey on the back of the palate throughout. Some nice warmth from the alcohol which is just (barely) subdued by the hops. M - Has some weight on the tongue, but finishes very dry. Carbonation is spot on (finally). O - Full of win. Hop flavor/aroma are great and the dry finish lets the hops shine. I find myself wanting just a hint more body/malt character, but not much at all. Could dial the ABV down a bit (or the malt bill up a bit) and get this in perfect balance, but it's pretty close as is. Next time? - a bit of carapils for body or maybe a bump in the malt bill (at the expense of dextrose). The hop bill is very nice and the smooth bitterness profile that seems to come from the FWH is something I want to see more of.

Notes

Add dextrose after high krausen. Only ended up w/ 3.1gal in bottling bucket. Bottled w/ 2.07oz corn sugar. 2/1/14 - Bottling Day. A - Clear gold/amber. Turned out very clear for all the dry hopping and racking shenanigans. S - Big Simcoe nose. Floral, slight pine. T - Floral, woody, moving toward dank on the finish. Bitterness doesnt hit all at once and has a very smooth profile. M - Fairly light body for this much ABV. Carbonate before verdict O - I'm very happy with this, though it's not quite what I expected for this many calculated IBUs. Bitterness is very smooth, particulary up front. Could be due to the FWH. The floral/woodsy simcoe dominates the nose. Maybe change the hop bill to add some more citrus/resin next time? 31 bottles that I expect will run out all too soon.
