Notes

04-19-2020 BATCH 211 Rebrew of Batch 147 from 04-16-2016. Maiden Voyage on the SS Brewtech Brewhouse Per Brunwater: Mash 5.18 Gypsum, 2.88 CaCl, 2.04 mL Lactic. Sparge 3.60 Gypsum, 2.00 CaCl, 2.04 mL Lactic. Yields 145 ppm Sulfate, 97 ppm Chloride, pH of 5.49. Actual Mash pH was 5.44, Preboil pH 5.52 I forgot to add the Sparge salts and Lactic Acid. Without those salts the water profile is Sulfate 90 ppm, CaCl 71 ppm, and estimated pH of 5.59 12-29-2020 Rebrew of Batch 211 04-19-2020. Changed FWH from 1.00 Centennial to 1.25 CTZ to bump up IBU back to the 55 range as well as due to not enough Centennial in stock. Per Lallemand calculator need 16.40 grams yeast, either under pitch or switch to US-05. 05-27-2021 BREW DAY! BATCH #226 Per Brunwater: Mash 4.05 Gypsum, 2.23 CaCl, 1.96 mL Lactic. Sparge 2.65 Gypsum, 1.46 CaCl, 2.55 mL Lactic. Yields 100 ppm Sulfate, 80 ppm Chloride, pH of 5.66. Actual Mash pH was 5.45, Preboil pH 5.36 Adjusted to use 1.00 Whirlfloc Tablet just to see if beer gets clearer. Also adjusted dry hop schedule to from 5.00 3 days before kegging to add 1.00 oz right at yeast pitch, also 3 day dry hop from 4.00 to 3.75 due to inventory. Did not use any oxygen porior to pitching and did not rehydrate yeast. Slowest fermentation take off I remember. Yeast is dated best by 09-2021, batch 43611 1431 250. Let mash settle for 10 minutes before starting recirulation, had no issues. 06-02-2021 10:20 AM REMOVED INVENTORY 05-28-2021 6:30 AM Nothing Yet but positive airlock SG 1.059 05-30-2021 9:30- AM Really been no activity happening untill now. Looks like 1.057 so it may finally be taking off. Airlock is just barely bubbling but it is moving. 05-31-2021 6:00 Am It's definately going, not very hard but it is moving. SG 1.052 airlock is bubbling. 8:00 PM SG 1.049 06-01-2021 6:30 AM SG 1.046 06-02-2021 6:00 AM SG 1.037 06-03-2021 1:30 PM SG 1.019 06-04-2021 5:30 AM SG 1.010 Airlock is still going pertty steady. 06-05-2021 11:00 AM SG 1.012 Airlock activity has stopped or at least slowed quite a bit. 06-07-2021 6:15 AM SG 1.011 06-18-2021 7:00 AM SP to 65, 9:45 SP to 60. Added dry hops, diod not put them in a bag, connected CO2 at 3# to 5# for cold crashing. 06-19-2021 6:45 AM SP to 55, 10:30 PM SP to 50 06-21-2021 1:45 PM KEGGED. Had lot's of issues with poppet valve getting clogged with hop debris. Should always bag the dry hops. Got about 5.00 gallons into keg before it completely stopped. Looks like about .50 to .75 gallons left in ferm. Original Ferm volume was 5.50 gallons. OG 1.059 FG Tilt 1.007, Hydro 1.005, call it 1.006 ABV 7.00% pH 4.62 at 66.5 degrees
