New recipe, Modified brewing water to this Koln profile. https://www.homebrewtalk.com/wiki/index.php/K%C3%B6lsch Brewing water characteristics of Köln Ca: 104 Mg: 15 Na: 52 CO3: 152 SO4: 86 Cl: 109 Notes: The soft water of Köln lends Kölsch its distinctive soft, rounded mouthfeel. This effect may be hard to duplicate for most homebrewers using their ordinary water supply. Brewed on7-5-2020 - Pitched at 56F, had problem with controler and used Mash Tun controler. Unfortuantley it was set to heat mode. Ended up cooling to 41F. Raised to 60F. 7/6/2020 - No activity. Added O2 and raised to 62F. Ended up adding another package of Koln yeast to fermenter. Active fermenation within a few hours. 7/12/20 - SG = 1.014 very milky cloudy with yeast still very active. No off aromas. Didn't taste. Raising temp from 58F to 60F and then on up later this week to 62F. 7/19/20 - SG = 1.009 hazy straw colored, light pils malt with some floral earthy minty hop aroma. Med light body with some sweetness still and a light hop bitterness on finish. Finishes dry. Crash cooling. 7/20/20 - Added gelatin to 36F beer. 7/22/20 - Hazey golden yellow, some sweet pilsner malt and light floral hop aroma. Nice light to medium body with some light hop bitterness and sweetness. Giving it another day and kegging.
