Taste Notes

07-30-2020 Batch #1 Definate problem with this batch. One keg undrinkable, one keg was ok but was dull and lost all the fresh hoppiness. Slight metalic flavor. This batch tasted pretty good going into the kegs and I was pretty excited about it. Kegged in the (2) three gallon kegs so I'm not sure if there may have been an issue with the kegs or with the transfer hose when kegging. All cold side hoses will be discarded for new ones. Per Jim: "Ron the Axe Man missed the bitter hit at the beginning of the sip, nailed the middle of the tongue and on the good keg it was blah and on the bad keg it was wrong". 01-28-2021 This Batch #2 definetly hit the mark. I'm not sure that it was as close as it should be but it was pretty tastey. We had no problem kicking the keg in about 2 weeks with Jim and Leo's help over Thanksgiving. Should brew this recipe again as is or with minor changes. Possibly more dry hops and or late hops. I think it could use just a little "Crisping Up", so maybe a slight water profile or pH change.

Per Surly Website: 100% Golden Promise, Citra and Mosaic Hops, English Ale Yeast, OG 16 Plato (1.065), ABV 7.2%, Straw Gold, Low IBU 05-24-2020 Adjusted to current inventory, dropped BH Efficiency from 65% to 60%, Trub Loss from 1.25 to 2.00 05-30-2020 BREW DAY BATCH #214 Adjusted Hops to actual on hand inventory, did not make any adjustments for IBU. Original IBU was 81.4, adjusted is 81.0. Readjusted Mill gap to .040 on the side towards the motor, it seemed to be just a hair bigger than the other side. Also forgot to add the 2.4 mL of Lactic top the Sparge, did not need it anyway. BrunWater target 152 ppm Sulfate, 97 ppm Chloride, pH 5.51. Actual pH measured 5.30. Sparge salt additions added to mash, 11.50 Gypsum, 6.05 CaCl, .75 mL Lactic. Version 2.0 Adjustments: 07-30-2020 Adjusted Hops and Hop Schedule. Doubled the 5 minute and Whirlpool additions, Dropped the 60 minute Warrior from 1.75 to 1.00 to reduce IBU, switched dry hop addditions to same amount but using Lupomax. Calculated IBU went from 81 to 93. 08-26-2020 Change the yeast to (1) pack, use a Propper Starter to make a (1) liter Starter. Drop the batch size down to 5.25 and added starter to bottling volume. 09-23-2020 Adjusted second Mosaic Dry Hop from 1.20 oz to 1.00 oz. Not sure why it was 1.20, I think because I had 1.20 left and decided to use it up. 10-22-2020 Changed BH efficiency from 60% to 55%, increased grain from 17# to 19#. Did not adjust Hops. 10-24-52020 BREW DAY BATCH #221 See Brew Data Sheet for brew day data. BrunWater target 152 ppm Sulfate, 97 ppm Chloride, pH 5.70. Actual pH measured 5.29. Mash additions 6.89 Gypsum, 3.62 CaCl, .40 ml Lactic. Sparge additions not added to Mash this time, 3.88 Gypsum, 2.04, CaCL, 2.09 mL Lactic. Held the Lactic out since mash pH measureed 5.29. 10-26-2020 6:20 AM Still no signs of activity and no airlock pressure. 10-26-2020 7:00 PM Same no activity and no pressure. It's been two full days since yeast pitch and it appears nothing is going on. No change in the Tilt Hydromewter reading. Went ahead and added (1) pack of US-05 dated 09-2021. Rehydrated in 77 degree H2O. I did not add any oxygen to wort when pitching the US-05. Increased SP from 67 to 68 10-27-2020 6:20 AM We have fermentation! Some kreasen is up and actually starting to brown a littl. Still no airlock activity and no pressure, not qure why. Tilt SG is 1.065 from 1.070. Looks like SG started dropping sometime betweeen 7PM and 11PM last night on 10-26. SHortly after pitching the US-05 so I assume the WLP-007 is finally starting. I've never had US-05 take off in a few hours. 10-28-2020 6:30 AM Red Tilt 1.042, still have kreasen but no airlock activity or pressure. I checked lids and everything seems tight, no leaks. Still not sure why no positive pressure in airlock. Going to let it ride to about 1.025 to 1.030 before adding first dry hop addition. 10-28-2020 10:30 AM REMOVED INVENTORY, After increasing Citra 2017-04 from .75 to .875 and Citra 2020-05 from 6.50 to 7.00 to match actual inventory. 10-28-2020 2:00 PM Tilt 1.036 10-29-2020 6:25 AM Tilt 1.026. Added first round of dry hops. Found CO2 leaking from around thermowell. Looks like it had a tear, replaced with other lid. That's why no airlock activity. 10-30-2020 6:20 AM Tilt 1.021. Airlock still going strong, kreasen abouit same, may be down a little. 10-31-2020 10:00 AM Tilt 1.018 11-06-2020 8:30 AM Tilt 1.015, added second round dry hops. 11-10-2020 3:00 PM KEGGED. Fermentor had 5.50, filled till it came out the Gas QD, left .50 in fermentor. Tilt 1.012, Hydro 1.010, calling oit 1.010, OG 1.072 = ABNV of 8.3% Tastes very good, nice fruitiness, some juicy and a little bit of bite. I'm happy with it. DOes not taste too boozy even at 8.3%.
