Notes

March 20th, Messed with pH today and got mash water to 5.2 from 9.2 with malic acid. 5.2 in mash tun. Mashed for 60 mins with 3 gals at 150F. Got pH down to 5.2 for sparge water, 2 gals at 170F. Got brew water to 5.2 pH. Hard boil for 90 mins start with 6.75 gal with a gravity of 1.032. After boil, OG 1.040. Right at 5 gals in brew pot and used a glass carby to ferment. Wort chiller was fantastic. Got down to 70F and pitch Wyeast 2565 activated at the start of brew day. Put heat belt on from start. April 5th, bottled. Ended with a FG 1.007 but only 3.5 gals. , Bottled it all and it smelled like beer. Harvested the yeast into a flask, then moved to mason jar.
