Taste Notes

Not as "Juicy" as Batch #213 but still tastes good.

05-16-2020 BATCH #213 Per BrunWater: Mash and Sparge Salt additions added to mash. 4.51 grams Gypsum, 9.89 grams CaCl, no lactic. Mash profile 118 ppm Sulfate, 235 ppm Chloride, pH 5.49. Overall water profile 72 ppm Sulfate, 148 ppm Chloride. Actual Mash pH Checked 5.44 08-13-2020 BATCH #218, Rebrew of Batch #213. First brew after switching the Brewhouse water filter. Per BrunWater: Mash and Sparge Salt additions added to mash. 4.61 grams Gypsum, 10.11 grams CaCl, no lactic. Mash profile 103 ppm Sulfate, 205 ppm Chloride, pH 5.57. Overall water profile 72 ppm Sulfate, 148 ppm Chloride. Actual Mash pH Checked 5.27. I did not use the 1.91 mL Lactic in the sparge. Had a bit more water going into the mash to compensate for the .75 gallons in the RIMS and Tun that would be added to Boil. Was always a bit short on the Mash Volume so I changed where this was added since the .75 would be added to the volume as part of the Sparge process. Not sure if that's what dropped the pH down. It also could have been that I used Simpsons Maris Otter instead of the Maltwerks Pale malt. 12-12-2020 BREW DAY BATCH #223. Added .25# of Malted Oats on ther fly for mouthfeel. Did not adjust any water volumes. Also grabbed the wrong Galaxy bag so adjusted to use the batch from 10-04-2019 not 03-06-2019. Did not make any adjustments for IBU. Noter the Mash Volume in the Tun was at about the 8.50 Gallon Mark. Per BrunWater, Mash additions 2.93 Gypsum, 5.85 CaCL, Sparge Additions 2.07 Gypsum, 4.15 CaCL, 2.36 mL Lactic. Yields 78 ppm Sulfate, 148 ppm Chloride, Mash pH of 5.68. Actual pH measured 5.44 so I did not add the Sparge Lactic. See Brew Data Spreadsheet for Brew Data Details. BRY-97 Yeast had an expiration date of 11-2020. It had no problem takin off within a day or so. 12-13-2020 10:00 AM Tilt 1.055 and airlock activity, added first round of dry hops. with weight in bag. 12-16-2020 1:00 PM REMOVED INVENTORY 12-17-2020 3:00 PM Tilt 1.013 Removed frist round of dry hops. 12-26-2020 11:30 AM Added second round oif dry hops in bag, SP to 63. 2:15 PM SP 60 12-27-2020 6:30 AM SP 55 01-01-2021 12:00 Noon, KEGGED. Blue Tilt 1.010, Hydro 1.009, pH 4.78 at 55.60, 4.80 at 56.1 OG 1.058, FG 1.009 ABV 6.5%, 83.8% Attenuation Filled till it stopped coming out of fermentor with tube pretty much straight down. It was still running pretty clear, maybe a touch of yeast. It did not come out the Gas QD, keg was pretty full when I hooked up the CO2, so calling it 5.00 Gallons
