Bell’s Best Brown Ale clone 5 gallons, extract with grains; OG = 1.058 FG = 1.013 IBUs = 30 ABV = 5.9% 10-29-2020 Updated Ingredients to current inventory. Increased 60 minute Cascade from.75 to 1.00 to increase IBU Slightly 11-12-2020 Adjusted Mash Schedule and temp from 155 to 154 First Batch Planned fermentation in the new Flex+ Fermenter 11-15-2020 BREW DAY BATCH #222 See Brew Data spreadsheet for detailed readings. BrunWater target "Brown Balanced" Profile 70 ppm Sulfate, 55 ppm Chloride, pH 5.66. Actual pH measured 5.33, with mash salts only did not add any Lactic. Mash additions 2.67 Gypsum, 1.15 CaCl, .00 ml Lactic. Sparge additions, 1.68 Gypsum, .72, CaCL, 2.18 mL Lactic. Held the Lactic out since mash pH measured 5.33. First brew to be fermented in new Spike Flex Fermentor using chilled water recirulation from fermentation freezer. 11-16-2020 6:15 AM Blue Tilt 1.049 11-18-2020 6:15 AM Blow off still going, 1.028. 3:00 1.025 about the same maybe a little slower 11-19-2020 6:15 AM 1.022 Airlock same 11-19-2020 12:30 PM REMOVED INVENTORY 11-20-2020 9:00 AM 1.019 11-23-2020 6:15 AM 1.016 11-25-2020 6:15 AM 1.015 11-29-2020 10:30 AM Kewgged into keg #4 till it came out gas QD. OG 1.055, Tilt 1.015, Hydro 1.013. 1.055 to 1.013 = 5.6% ABV Attenuation 75.5%, 1450 is rated 74-76%. pH checked 4.46 @ 63.3. Looked like a little less than 1 Gallon left in Flex. Right where the cone starts was where the beer was. The pick up tube was almost straight down, maybe 10 degrees off. Could have taken more it was still running clear but the keg filled up so had to stop.
