Notes
This was a version intended to be a two step mash for the purpose of assessing melanoidin production without adding Melanoidin malt (which imparts a reddish hue to the color). Controller failure at close of mash prompted a sparge with water far short of target temp. Shortened pre-boil volume to accomodate the inefficiency that prompted.
