Must day: 3/31 Purchased honey for Dutch Gold in Lancaster Plan - Batches o Split 5 gallons into 2, + one Clover traditional for kegging (2.5 gallons) + one melomel with raspberries and blackberries(?) (added into remaining 2.5 gallons with some additional honey based on volume increase) - Nutrients => Use fermaid O via TOSNA approach o (Brix x 10) x (N requirement factor for EC-1118/ 50) x Batch size in gallons = total grams of Fermaid-O o for this batch (Brix = 21) (N = 0.9 assuming med) (batch size = 5 gallons) o (21*10)*(0.9/50)*5 = 18.9 grams + Separate into 4 equal amounts (4.725 grams each) + Add first at 24 hrs + Add second at 48 hrs + Add third at 72 hrs + Add last at 7 days Must Prep - Sanitized 6.5 gallon plastic fermenter - Filled fermentor with 3.5 gallons of water - Added 16 lbs of clover honey from dutch gold - Measured SG at ~1.115 SG - Aerated with pure O2 for 120 seconds - Pitched 3 packs of EC-1118 (after rehydrating in 98 deg water) -Fermentation kicked off aggressively later that day 4/1 - Added first nutrient dose (4.3 grams) - Added bentonite slurry to batch (2 tsp in 1/2 cup of water) - Measured gravity (coursely) at 1.105 SG 4/2 - Added second nutrient dose (4.725 grams) 4/3 - Added third nutrient dose (4.7 grams) 4/5 - Degassed - Measured gravity at 1.100 SG 4/7 - Degassed - Measured gravity at 1.086 SG - Added last TOSNA addition of 4.8 grams 1/3 sugar point is 1.077 5/9 - stabilization - Measured gravity at 0.998, fermentation is complete - Added 3/4 tsp of potassium metabisulfite and 1.5 tsp of potassium sorbate 5/12 - backsweetening - Added 3 lbs of clover honey - Added 16 oz of rasberry concentrate - Blended with half gallon of mead until well blended - Filled 5 gallon carboy to the top - Added a pair of vanilla beans (split and scrapped) - Final numbers: o New volume: 16 oz + 3/12 = 0.5 gallons o ABV = 9/10 * 15.7 = 14.13% o OG = (115*9 + 290)/10 = 132.5 o FG = (-2*9 + 290)/10 = 27.2
