Taste Notes
I was very afraid that the wild tempurature swings at the begining of fermentation would make this beer a dud. But I was wrong! This beer pops with citrus flavor and reminds of the 1st batch. The batch brewed the week before does not have that burst of citrus flavor. It seems a bit muddled. Must mention that the wheat used in this is differnt that version 1. Version 2 had a combo of white wheat and the wheat I got at Nepenthe.
Ordered White Wheat but received a darker colored wheat. I assume it is Dark Wheat from Germany.
Notes
06-27-2020: Could only cool to 76F. Pitched yeast and forgot to get a gravity reading. Thermometer on fermentor read 77F. By By 6:30 it was down to 70F. By 11:45pm is was down to 68F.
06-28-2020: It was bubbling like crazy this morning. Checked the temp and it is 77F. The fan is barely pulling cool air into the chamber. The charger is 9v, so I added a 12v charger to help speed up the fan. The 12v will not turn the fan. Pulled out a larger fan with its own power cord and plugged in the original power charger. Hopefully this will cool things down. At 12:30pm it is still at 77F. Still at 77F at 2:30. Added 2 gallons of ice jugs into chamber.
