Multi-Step Mash:
- 122 degrees - 20 min
- 149 degrees - 30 min
- 158 degrees - 30 min
- 170 degrees - 10 min (sparge)
Split 2 yeasts used in two Primary carboys:
- White Labs WLP - 029
- Wyeast #1007
Fermentation:
- Prmary: 10-14 days at 55 degrees - 66 degrees
- Secondary: 15 - 30 days at 40 degrees
- Dry fop in last 7 days of secondary fermentor with 1 oz Herzbrucker whole leaf lot
Bottling:
- DME for priming sugar 5.5 oz
- 2 weeks bottle conditionig
