Notes

Second time brewing this recipe (version 1.1) updated original "It's my party I can Rye if I want to" with a few tweaks: 1) increased Rye bill from 13 to 16% 2) Preboiled water, used mash cap, added 1 g NaMeta 3) delayed hopback recirculation to 20 min before KO 4) Used Mangrove Jack's M44 5) Increased dryhop from 3oz to 5 oz (3oz Simcoe, 2oz Chinook) but reduced contact time to 4+ days to 2 days Dropped lots of the break material before pitching Saw 30 hour lag time, but fermented fine after that. Added Fermaid K at about 20% depletion Notes from version 1.0: Had FWH in kettle so I needed to filter before plate chiller, so used Hoprocket and 1 oz Citra leaf in my boil recirc Transferred too fast so the beer was at 85°F in fermenter, used chamber to knock down to 66°F before yeast pitch. Added extra pack of US-05 and some yeast nutrient 14 hours into fermentation Kept pressure at 6 psi starting on day 3 Hops were dropped in straight on day 4, bubbled CO2 3x to rouse hops, cold crashed on day 5 and added gelatine as fining.
