Notes
When preparing the priming sugar, add 1/2 cup honey, 3/4cup corn sugar, and 2-3 bags of chai tea to approx 1 1/2-2 cups of water.
In another 2 cups of water simmer 1 vanilla bean- split, scraped and chopped, 2-3 cinnamon sticks, 3-5 cloves, 1/2 tsp of whole black peppercorns, 3-5 whole allspice seeds, and about 2inches of fresh ginger- peeled and chopped. Allow to boil for at least five minutes. Strain this liquid into the bottling bucket with the priming sugar mixture.
