——————————————————————— 12/30/2019 8:00Am (Moni), I boiled 1 qt of water with 4oz of Ligth DME for 10+ minutes, and placed in 4 qt Erlynmeyer flask with Wyeast California Ale yeast. I occasionallY stirred the flask. 12/31/2019 (Tue) Mash Start 10:00am @ 151.6F with 20qts (5gal) of 169F strike water (Outside temps was ~40-45F) (Strike Temp 169F, water in Tun 162.7F, after dough in ~151.6F) Mash End 11:00am @ 150.9F Batch sparge for 15 minutes with 4 gallons of 178F strike water, after doughin 167F Mash 1st runnings OG = 1.078 (1.065 @ 126F) 3.3 gallons [257 pts] 5 gal in and 3.3 gallons Out for 1st runnings Mash 2nd runnings OG = 1.034 (1.016 @ 149F) 4.0 gallons [142.8 pts] [257pts + 143pts = 400.0 points (calculated] Combined OG in boil pot before boil started: OG = 1.051 w/7.3g (1.038 @ 129F) [561ptsx7.3g = 378pts] 60 min boil from 12:00pm-1:00pm OG = 1.061 (1.060 @ 70.8F) in 5.2 gallons (includling 1L starter) Pitched 1 qt WYeast Cali Ale yeast starter @ 2:30pm on 12/31/2019 (Tue) (I didn;t use the sitr plate for this starter, just shaking) This beer fermentation is going ok by the next morning. 1/18/2020 (Mon) After 18 days in primary. Racked 5 gallons to priming bucket. Boiled and added 4.0 oz of corn sugar -------------------------------------------------- FG = 1.011 (1.010 @ 70F) 53 * 12oz bottles Bottled labeled: Citra Est ABV = 6.6% OG-FG, 1.061-1.011 = 6.6% ABV I washed, sanitized, and ran bottles through the dishwasher on the anti-bacterial setting.
