02/29/20 - brew, chill it 62F 03/01/20 - pitch yeast, hold at 62F for 10 days 03/12/20 - increase temp to 67F and hold for 10 days 03/22/19 - transfer to keg, "naturally" carbonate with ~8 oz corn sugar
