Notes

Mash at 150*. Boil for about 10 min (no hops) to sterilize. Cool to 95*. Pitch Lacto. Purge kettle head space with CO2. Seal kettle well with plastic wrap, and place lid on. Allow Lacto to drop PH for 36-72 hours in warm environment (like 85-90). Shoot for 3.4ph, or desired flavor. Once desired sourness reached, brew as normal with hop addition. Ferment at 60*. Give it a month to mature as flavor will improve with time.
