Elegant and great
by AiptasiaThis is a simple recipe I designed for my Wife, who appreciates the style. This high gravity beer requires an alcohol tolerant yeast and T-58 works well with it pitched directly into the fermenter. This beer does well with a two week ferment on the yeast cake at 65 deg. f.. Bottle condition one week and drink it young. Scores routinely in the 40's in local beer competitions if sampled younger than six months.
