Notes

Chill to 46 and oxygenate @ 1L/m for the entire process, pitch and let free rise to 52. Keep at 52 for 2 days after terminal gravity reached. Chill to 42 and collect yeast. Keep at 42 for three weeks. Move to brite and force carb. Keep in cooler for 8 weeks before serving.
