Bare Bottle Recipe origionally Derived from recipe on can: Kelsey Holstein's Barebottle feshly berried strawberry ornage gose mash 150F for 60 min, but done w pasturized Plum puree and acid, no bacteria. Note David Wilson has told us on Oct 13th how to pre-acidify wort so that head retention and development would not be ANY issue at all in a sour/ tart fruit beer. Open Qs: 1) How much mango puree... NOTE chunky=tidbits, or smooth=puree. Are either stringy, fiberous that will clog a ball-lock post?? in consideration YELLOW CAN Indian premium Alfonso, $4.99 for a 30oz (850 gm) "Desai Amar Ratnagiri Alphonso Mango Tidbits" with Alphonso Mango Pulp* ) YELLOW CAN 4 labling versions of this can exist/ but just 3 products ------------------------------------------------------------------- YELLOW CAN "Tidbits Sweetened" (I have from IC&C) CHUNKS for Lassi BLUE CAN "Natural" or some "Sweetened" color not used consistently, Pulp BURGUNDY CAN (unsweetened, pulp Natural) RED CAN (sweetened) assumed pulp note tidbits (chopped chunks) are what is used in Mango Lassi...bad in Beer Keg, possibly good in Fermenter Indians tend to call puree, pulp. Mango plup sweetened, would be less, the MAX usable would be less due to sweeting overtaking strong mango flavor impact in the final beer. Mango pulp unsweetened exists, but I am not yet clear on a source. Possible speical order from IC&C*. 2) When and how to add this? Want to add directly to keg... post fermentation. MAY have to direct add it using a strainer to remove EVERYTHING chunky. Or MAY have to add during secondary.... so that fermenter can be racked off lees into keg, with ZERO chance of clogging.
