- Mash 66C, 60mins Co-sour - Chill to 35C - no whirlpool hops. pH adjust to 4.5. Co-pitch L.plantarum 3g Sour Pitch & Simonaitis 1L starter - ferment between 30 and 35c Add hop tea + dry hop - or when target sourness reached.
