Taste Notes
- Designed to be a bit of mash-up between Pliny the Elder and Green Flash WC IPA.
- Terrific citris / pine flavor very balanced with malt backbone.
- Definitely a new standard to have on tap.Notes
YEAST STARTER- 2.5L yeast starter prepared
BREW DAY
- Took actual temps of grain and mash tun prior to mashing
- Infusion Mash at 152. Batch Sparge
- Pre-Dextrose addition, OG should be around 1.057…
- Added 33 IBU at 90 Min of at 70/30 blend of Simcoe / Columbus
- Added 18 IBU at 60 Min of at 50/50 blend of Simcoe / Columbus
- Added 14 IBU at 30 Min of at 50/50 blend of Simcoe / Columbus
- Added 27 IBU at 15 Min of at 50/50 blend of Simcoe / Columbus
- Add Dextrose at 15 min
- At Whirpool added 45%/27.5%/27.5% ratio of Cascade / Columbus / Simcoe hops. Assuming 13 gal at whirpool added at .35oz per gal of wort
- Chilled to 64 in 30 min.
- Let naturally rise overnight to 67
FFERMENTATION
- Added yeast at 64F, and allowed it rise naturally to 67F. Held 67 for 5 days, then allowed it to rise to 70 and held for 2.0 days; then decreased back down to 67.
- Once near FG, added Dry Hops. DRY HOP
- Applied 1st charge at .56oz / gal (assuming 12.5 gal of beer in vessel) using 1.75oz each of Simcoe / Cascade / Amarillo / Centennial.
- At day 5 of dry hop, added 2nd charge at 25% of first charge amount (the Russian River approach), using 0.5oz each of Simcoe / Cascade / Amarillo / Centennial.
- On day 9 of dry hopping, crash cooled to 47F and let sit for 48 hours.
