Notes

One of the hurdles in crafting this beer will be mash pH management and how you handle the black malt to hit a proper mash pH of 5.2–5.5. You may want to consider adding the black malt during the vorlauf process if you cannot get your water chemistry right. Add yeast at 66F, do not exceed 70F during fermentation. Do not dry hop beyond 4 days. Carbonate to 2.5vols
