Notes

Had to substitute yeast for Wyeast 3068 due to Steinfillers not having 3056. ORIGINAL RECIPE DOES PROTEIN REST AT 126 DEG FOR 15MIN, THEN RAISE TO 153 DEG FOR 60MIN. AFTER FERMENATION IS COMPLETE APROX 10-14DAYS, ADD 6 LIMES OF ZEST & JUICE & POUNDS OF 2lbs COCONUT FLESH & WATER TO SECONDARY FOR 10 DAYS. SUBSITUTE SHREDDED NON-SUGAR COCONUT IF CAN BE FOUND
