Notes

This is a dead ringer for an Australian Lager, e.g. Carlton Draught. Using Safale W34/70 lager yeast, the trick is to ferment it at ale temperatures. 19.2 degrees celcius. There will be a large amount of sulphur in the first few days of fermentation. When reaching terminal gravity (within 5 points), increase the temperature to 21 degrees for a diacetyl rest for 4 days. Cold crash for a few days at 2.5 degrees. Keg and enjoy your classic Australian Lager.
