Notes

ALL LATE STAGE HOPS (no bittering) Turn on chiller and bring wort down to 170 170 let stand covered (stirring ocassionally) for 30 min then uncover and turn on chiller BIOTRANSFORM DOSE - 4oz (2oz EACH CARBOY) add at high krausen KEG HOPS - 12oz total (6oz each carboy) ---------------------------- Water profile (75 Cl, 180 SO4, 12 Mg, 11 Na, Ca 100) Mash PH 5.20 Day 1-4: Pitch at 67. Set freezer to 70+1 for day 1 add bio hops (after first signs of healthy start) then raise to 72 until initial fermentation complete (raise temp as needed if it shows sign of slowing) let free rise to 78 after initial ferment complete
