Notes

Use 15kilos/33lbs of Pineapple puree per 105Gal recipe or equivalent to 3.75% as per weight over volume. Should be needing about 23kilos of fresh pineapples to be purchased. They will be pureed, bagged, sterilised then frozen before adding them into the secondary. For the Toasted Coconut, I would think 12Kilos/26lbs is needed or equivalent to 3% as per weight over volume. Half will be added to the mash and the other half in the secondary. A ten-day minimum secondary is necessary to extract the coconut flavors. An estimate of 50-80 coconuts will be needed for this recipe Lime Juice or Calamnsi will be used at a rate of .75% weight over volume and will be added in the secondary. That is equivalent to 2Kilos/4.4lbs. An estimate of 20 kilos of Calamansi will be needed to extract 3 liters of Juice. The Juice will be bagged and sterilised before adding into the secondary.
