Notes

7/18/12 - Mash-in at 149* for 60 minutes with about 3gal water. Good first running. Sparge at 170*. Pre-boil volume 7.5gal, SG = 1.036. Post-boil volume = 6gal. SG = 1.040 (below target). Had a wort chiller malfunction during cooling - ilet hose came off and sprayed some water into the wort. That may have thrown off SG, but doubtful. Also may have filled the carboy up too high. 7/19/12 - Fermentation started, nice krausen buildup. May want to switch to a blow-off tube. 7/23/12 - Racked to secondary. Harvested yeast from bottom of primary. Gravity out of primary = 1.009. 7/29/12 - Racked to keg to age for at least a week in fridge under CO2. FG = 1.009. Very clear, almost no sediment. Malty flavor should mellow out with age.
