4/5/2019 6 gal 1.059, pasteurized no boil. 64F pitched very old starter of OYL-200 - hopefully an underpitch? added 7oz pellet hops (Citra Amarillo equinox, 1oz Simcoe) at pitch time. added 1tsp amylase? probably only alpha not gluco, wrong kind, but whatever 4/5/19 put in temp chamber set to 80F, no airlock Airlock activity within 24 hrs. Smelling like 644 should by 36 hrs. 4/8/19: no obvious air lock activity, added 2Oz each of Citra, Amarillo and Equinox, and one cup dextrose Ordered glucoamylase in case it doesn't go dry. on 4/20, added 1tsp glucoamylase through a funnel, (being careful to limit oxygen ingress), agitated well. Smelled great! 4/28: 5.1 brix after recalibrating refractometer down 3 points. This calculates to a final gravity of .997 or .998, and 4-5 Grams carbs per glass, if hydrometer verifies FG. 4/29/19: hydrometer 0.999 at 64F. kegged with 4.1oz dextrose, 2oz each mosaic (2017) and eukanot(2016). recieved just under 5gal . Calculated carbs: Total gravity, with dextrose additions: 1.063 --> 0.999 = 6.3g
