Taste Notes

Next time, do a full regular batch size. By the time you transfer the lacto batch after 3 days, you don't get a full 5 gallons.


No campden tab. 1.25 tsp. lactic acid to get to 5.3. Mash all grains at 148 for 90 minutes. Drain bag for 30 min. and added 2 tsp. lactic acid to lower ph to 4.5.boil. Boiled for 5 minutes then cooled to 100 deg add to carboy with 1 carton/quart of GoodBelly Mango. OG was 1.051 without GoodBelly added. Let sit at room temp for 3 days. No visible sign of fermentation. No air lock action. pH down to 3.17 Reboil for five minutes with .5 oz. of Amarillo hops and added 1 pack Safe Ale 05. Added a quart of mango juice after high krausen. After 10 days, cold crash for two days and then add to keg with 1 tsp. of Biofine in each to remove the yeast. Biolded salt and corriander in a pot with 3 cups of water for 5 minutes. Strained and added to bucket, mixed in then keg.
