Notes

• • • • Brew Day: 04/19/19 • • • •  Mash turned out as planned, missed SG by 1 point (1.039) and hit target volume of 8.25. Added 15mL of lactic acid at 15 minute mark to correct pH (went a little more aggressive than usual as saison can have a slight tang to it). Chilled to 60, collected 5.5 gal of wort (and dumped another .5 gal, including trub), oxygenated for 30 minutes and pitched whole starter into 65ºF wort to begin fermentation at 11:30 p.m. Placed SS Brew Bucket outside of chamber to allow temp to free rise, Tilt read 1.050 OG, meaning I missed my target by 6 points. I should have boiled off at 70% instead of 69%…will make note for next time. By 7 a.m. the next morning (4/20), air lock was bubbling and showing acitivity of fermentation, Tilt read a drop of 8 points to 1.042. By 8 a.m. Sunday morning (4/21), Tilt read gravity of 1.016, meaning fermentation is nearing completion. Temperature read 80ºF, so I affixed FermWrap and set temp to 82º. This afternoon, I’ll bring it up to 85º.
