Notes
Mash/Sparge: Mash per usual - sparge w/ 100F water to help drop temp into kettle
Add lactic acid as needed to drop kettle pH to 4.5.
Yogurt: Mix yogurt into sanitized bucket w/ warm wort. Add to kettle once temp drops below 110F. Hold between 95-105F for 18-24hrs or until pH hits 3.4-3.5.
Boil and finish as usual.
