Notes
DId a proper step mashing, including a acid rest at 122F, for 15 minutes, and slowly heated the run off and vorlaufed until I reached 150F, then held for 60 minutes. Vorlauf again into a sanitized fermenter with the 1/2 oz of hops, let it chill over night and then pitched WLP630. After primary fermentation, racked to a carboy and tossed in a handfull of Pilsner malt for added lacto. Aged in carboy for 3 weeks, racked to keg then aged in the keg for 3 months before force carbing and serving.
