Notes

Brew day 2/10. Collected ~8gal of wort. 1hr 45 min boil down to about 5.75gal Will chill and ferment at 67’ 1.086 OG 2/15 upped to 69’ 2/19 - gravity reading 1.022. Very smooth, little sweetness. Esters are nice. Almost bananaish 2/22 - dropped temp to 67 3/1 -PM dropped to 35 3/3 kegged, 14psi for 48 hours and disconnected 4/14 - 6 week rest done, test! 3/20 - taste test. Carb seems light but I didn’t have it on for serving. Taste has fruity notes from the yeast. Alcohol is not harsh, quite smooth. No off flavors that I can tell. Will let it warm up to see how it opens up.
