Notes

Added 9 gal distilled water to pot and mixed in water minerals Once blended, I pulled out water into jugs to achieve target mash water level (~7.5 gal) Also added 2 Tblsp of 5.2 Ph mash stabilizer to mash water Conditioned grain with 3.44 oz (by weight) of water 1.056 post mash measured 1.045 post sparge (~1.5 gal water rinsed thru grainbed) Lactose and Corn sugar added ~15 min left in boil Vanilla Bean added around 4 min (struggled with split and scrape) Measured 1.070 post boil with ~5.9 gal wort into fermenter Pitched and set fridge to 55 degrees to start fermentation Coffee added (Blood Lord, 5 oz for 10 hrs) with vanilla and cacao nibs Bittered a bit Added 12 oz lactose mix to keg to sweeten 2 Vanilla beans in final keg (5 total....1 in boil, 2 in Secondary, 2 in final keg) 1st Place Winner at Shine N' Brew Best drinker at Biloxi Craft Brew Fest Need to bolster mouthfeel - Increase mash temp/malto or lactose...a bit flat on mouthfeel - Go back to intelligentsia--lighter coffee blend to boast perfect flavor - dial back vanilla in secondary and keep keg beans to push vanilla forward
