Notes

Oct 22 2018 Brewed at Catalyst shop on a beautiful fall day. The guys were cutting wood nearby so there may be some sawdust that blew into the batch… who knows. Everything went as planned, with some final recipe tweaks just before brewing. Gravity, however was much higher than expected at 1.066 versus expected 1.057 so a couple things may have occured 1) estimated a low brewhouse efficiency (likely, as I altered it to 60 instead of original 68) or a high boil… but I was watching it and it seemed as though it was the usual. Tasted when complete, and had a nice rich aroma of coffee, roastiness and chocolate. Lookin’ good! Split into 2 carboys. Oct 31 Dropped in 28 g coffee beans, 140g of cocoa nibs Didn’t have the thief so didn’t pull a sample for taste or gravity yet. Nov 14 - tasted, kegged, and it’s a really really nice stout. It is smooth, great head, has notes of chocolate and coffee, while the coffee and heat from 7.8% seem to combine to add a hot peppery flavour. Nov 22 - 2nd carboy, without beans/nibs: added wood cubes and house blend of saison, bretts. Beer it was sitting in tastes a bit sour, lacto, bretty… should be interesting. A good shot in the dark… (name for the beer?!)
