Taste Notes

16.1875 " @ 14.8 brix before sugar. Ended up with just under 16 gallons post boil with Jaggery added. 1.065 OG put 4 gallons in my fermonster and six in one of lee's and just under six in his second fermonster. pitched my yeast at 7:30pm Dec 28 2018. 9 grams T-58 peppery belgian dry yeast.

Infuse with 9.38 gallons water in keggle lauter tun. About 11” 16.1875 " @ 14.8 brix before sugar. Ended up with just under 16 gallons post boil with Jaggery added. put 4 gallons in my fermonster and six in one of lee's and just under six in his second fermonster. pitched my yeast at 7:30pm Dec 28 2018. 9 grams T-58 peppery belgian dry yeast. Racked dec 31 2018. 1.018 sg Started fermenting again jan 8th or earlier. Jan 25th Lee’s racking Wlp 545 the slow one finished 1.008 imperial B44 finished 1.012 Racked T-58 feb 16 2019 to kegs I was happy with the t-58 until I experienced the slapstick fermentation with whitelabs 545 Belgian strong ale from lees. Just sweet enough with good fruit and creme
