Notes

Steeping: Put thee gallons of water in pot and steep grains at 155 (F) for 30 minutes. Rinse (sparge) grain bag with water to bring brew pot to 4 gallons for boiling. Bring steeping pot to a boil Boiling: Remove pot from the burner and add first addition 6 lbs LME and stir pot so LME does not scorch the bottom of the pot. When extract is disolved return pot to heat and bring to a boil Add Cascade hops bag at beginning of 60 minte boil Add Willamette hops bag with 30 minutes remaining Add 3.5 lbs of late add extract with 20 minutes to boil (remove pot from heat before adding to extract) Return to boil and continue boiling schedule once pot begins to boil Add Goldings hops bag with 5 minutes to boil Remove all but the Goldings hops at end of boil (squeeze bag to extra flavor) Cooling and Aerating: Per your normal proceedure Fermenting: Pitch starter yeast when wort is cooled to 70 degrees In two weeks transfer to secondary Boil oak chips in one cup of water for 10 minutes. Drain the water and add chips to secondary for 2 weeks. Add Cascade hops for dry hopping two weeks.
