Taste Notes

Tropical hop aroma and flavor.

Notes

Brewing: Added 1 teaspoon of Gypsum to the mash water while heating. This caused the mash to drop PH much lower than anticipated, to between 4.9-5.1 Mash tun was too small. Needed an additional .25 gal of room to properly close the tun. Yeast: Imperial A24 Dry Hop Yeast was started on Weds and this beer was brewed on the following sunday. The Imperial yeast was pitched into a starter vol of 1.8ml and put on stir plate for 2 days. On friday, I pour 600ml of the yeast intoa sanatized mason jar and refridgerator. I then made a two cup water/.5 cup DME started and added to the remaining yeast in flask. Put back on stir plate until pitched into wort 2 days later. Fermentation: Added dry hops on second day, approximately 14 hours after pitching yeast. There was little blow off tube activity until after I added the hops. The blow off tube began to exhale crazy after the hops. No krausen through the tube just co2. Added 4g of Fermaid-O on day 3. High krausen at this time and krausen was broken to gently stir in the nutrient. Blow off tube still chugging along. Still no boil over. Very tropical and juice hop aroma from the wort. Day 5 fermentation has slowed. Temperature 67-68 degrees. Day 8 SG 1.021 Racked into secondary and pitch left over A24 Yeast approx. 100 billion cells. Day 11: SG 1.021 Added 3 day dry hops Day 13: FG 1.015 Kegged Kegging: Day 13: 4 gallons from fermenter into keg. 40psi until pressure stopped then rocked back and forth for approx. 90 seconds. Let out pressure and turned regulator down to 10psi.
