5-31-15: Not super dry yet. Might ferment a bit more. Nice sweetness, would benefit from more clarity. There's a robustness to the honey that I like.
8-21-15: Dryer with a nice residual sweetness. Honey is a bit fruity (esters from temp fluctuations?) Delicious.Notes
3 gallons spring water
3 tsp DAP
1.5 tsp Yeast Energizer
8.5 lb WF honey (~2.83 lb/gal)
2 packs Lalvin D-47 Yeast
SG should be about 1.104, 24.48 Brix- FG should be 1.000, 1.6 Brix (13.71% ABV)
Heated water to 140F added honey in full 3 gallons
1/2 DAP and yeast nutrient in fermenter with rehydrated yeast
3 gallons is too much water - DUH - ended up with ~.6 gallon extra, in growler
SG = 1.091 / 21.9 Brix, should get down to 1.000/1.6 Brix (12.7% ABV)

13 Brix after ~30 hours, added 2nd half of nutrients

5-31-15: After 3 weeks, 8 brix/1.002 Gravity (12.51% ABV)

6-11-15: Racked to secondary into bucket then back to clean 3 gal carboy. Waiting for fruit for extra half gal. 1.000 FG

8-21-15: Bottled, got about 2.9 gallons total. 1.000 FG (12.7% ABV) No fruit added to half gal
