Notes

Brewed 10/31/2018 Toasted Indian Corn until it was slightly blackened and then popped it in the microwave. Added it to the mash. Forgot to add 1 lb of Carafa II. Should have sprinkled it over the mash at mash out. The beer came out brown instead and black. Made a started about 5 days before with one packet of Mexican Lager yeast. 11/1/2018 The next morning there was no activity. By the evening it was fermenting nicely. Not overly active but steady.
