Notes
First boil - 6 gal, 15 min
Cool to 100 and transfer
Adjust pH to 4.5 w/lactic acid
Pitch lacto starter, purge w/CO2
Hold at 80 until pH reaches 3.3-3.8 (4 days)
Second boil - 15 min, add salt and coriander @ 2 min
Cool to 64, pitch yeast (2L starter)
Ferment @ 75 for 7 days
