Notes
Transferred mash water at 170, ended at 167, 152 after grains added but pH 5.56 (estimated to be 5.31); added 10 grams of gypsum and reached pH of 5.50. Final mash temp was 150-152 and pH was 5.40.
Fermented strong at 50-52F pretty consistently, then mid 50s to finish primary for a few days at least. Dumped yeast by changing jar out on 10/5, and brought inside house; SG about 1.026-8ish. Added dry lager yeast 23 on 10/5 but it was expired and I didn’t see any activity. So I added a fresh 23 on 10/6, still saw minimal activity.
10/12: changed jar out. SG 1.023ish. Added 5.3 oz fresh toasted coconut and 2 oz cocoa nibs.This Recipe Has Not Been Rated
